Brookies: The Perfect Marriage of Brownies and Cookies!
Today, I tried my hand at Brookies - the ultimate sweet treat. The brownies are the perfect amount of gooey, while cookies are chewy and full of flavour. So if you're looking for an excuse to pig out, this recipe will satisfy all your cravings!
We're very lucky to have an AGA eR7 hooked up in-store to cook with. I used the baking oven for this recipe, which locked in all moisture and flavour. The oven kept all the heat it, resulting in a much more even bake than you would get in a conventional oven.
Be aware that this recipe is essentially two recipes combined. Meaning you're in for a serious arm workout. Luckily we had a KitchenAid mixer in our store to ease the strain on our precious Marketing Girlie :)

Ingredients
Fudge Brownies:
- 180g chocolate chips
- 113g butter
- 24g cocoa powder
- 200g granulated sugar
- 2 eggs
- 80g plain flour
- 1/2 tsp salt
Brown Butter Cookies:
- 113G butter
- 100g dark brown sugar
- 50g granulated sugar
- 1 egg
- 1/2 tsp vanilla
- 160g plain flour
- 1/2 baking powder
- 1/4 baking soda
- 1/2 tsp salt
- 130 g chocolate chips
Method:
- Firstly, brown your butter on a low heat. You should have 90g left. If not, add a little water. Set aside for your cookies.
Brownies:
- Melt your butter and chocolate together
- Mix your sugar and eggs
- Add butter and chocolate and mix
- Add flour and salt and mix
- Set aside while you make the cookies
Cookies:
- Mix sugar and butter together
- Add egg and vanilla then mix
- Add your flour, baking powder and baking soda and mix until no flour streaks remain
- Fold your chocolate chips into the mixture

Line a tin with greaseproof paper then add half your brownie mix. Add some cookie dough sparsely to create a marble effect - repeat. Bake in a 180 degree oven or AGA B4 for 40-45 mins until it is only *slightly* jiggly.
